Ingredients:
6–7 peeled, cored, and diced Cortland apples from Quebec
85 ml (1/3 cup) brown sugar
Two large pinches of ground cinnamon, if desired.

375 ml (1 1/2 cups) quick-cooking oats
60 ml (1/4 cup) Zenit organic vanilla plant protein
85 ml (1/3 cup) brown sugar
125 ml (1/2 cup) melted butter
30 ml (2 tbsp) diced almonds
METHOD
Place the rack in the center of the oven. Preheat the oven to 180 °C (350 °F).
In a bowl, combine the oats, protein powder, and brown sugar. Add the butter and mix well. Set aside.
Spread the apples and brown sugar in a 20 cm (8 in.) square baking dish. Cover with the crumble.
Bake for 50 minutes. Let cool slightly on a rack.
Note: I love revisiting classic recipes and enriching them with protein! It makes a nice change from the muffins and other protein snacks we usually prepare.
