Yield: Several energy balls
Preparation time: 15 minutes
Ingredients:
185 ml (3/4 cup) dried, pitted dates
85 ml (1/3 cup) boiling water
250 ml (1 cup) quick-cooking rolled oats
1 tablespoon of Zenit organic chocolate plant protein
60 ml (1/4 cup) pumpkin seeds or chopped almonds (or other seed):
60 ml (1/4 cup) dried cranberries
60 ml (1/4 cup) dark chocolate chips
60 ml (1/4 cup) almond butter or other nut or seed butter
Method:
In the container of an electric blender, combine the dates and boiling water. Cover and let stand for 20 minutes.
Meanwhile, in a bowl, combine the oats, Zenit chocolate protein, pumpkin seeds or other nuts of your choice, dried cranberries, and chocolate chips. Set aside.
Once the dates have finished soaking, blend until smooth. Add the almond butter and mix well.
Pour the date and almond butter mixture into the dry ingredients. Mix well. Use your hands if needed.
Shape into balls of the desired size. Refrigerate.
Comments: For an energy boost during your favorite sports activities. I love bringing energy balls with me in hot and humid weather because I don't have much of an appetite. The added protein helps sustain me and replace the famous ham sandwich.
