Protein oat bars with dates and chocolate

Galettes d'avoine protéinées dattes et chocolat

Yield: Makes 12 large cookies (approximately 7 g of protein, 4.5 g of fibre, and 34 g of carbohydrates per cookie)

INGREDIENTS

500 ml (2 cups) rolled oats

310 ml (1 1/4 cups) date purée

125 ml (1/2 cup) Zenit organic chocolate plant-based protein

80 ml (1/3 cup) textured vegetable protein (TVP)

2 eggs

80 ml (1/3 cup) oil

5 ml (1 tsp) baking powder

125 ml (1/2 cup) mini dark chocolate chips

METHOD

Preheat the oven to 180 °C (350 °F). Line a baking sheet with parchment paper.

In a large bowl, mix the rolled oats, date purée, and Zenit chocolate protein chocolate, TVP, eggs, oil, and baking powder. 

Add the dark chocolate chips and mix well until the mixture is uniform.

Using a 60 ml (1/4 cup) measuring spoon, form 12 large balls and place them on the baking sheet. Slightly flatten each cookie using a fork.

Bake for 12 to 14 minutes, or until the cookies are lightly golden. Let cool for a few minutes on the baking sheet before enjoying.
