Dry ingredients:
250 ml (1 cup) unbleached all-purpose flour
125 ml (1/2 cup) Zenit organic vanilla plant protein
250 ml (1 cup) quick-cooking rolled oats
5 ml (1 tsp) baking powder
2.5 ml (1/2 tsp) baking soda
125 ml (1/2 cup) diced apples
A little cinnamon – optional (see note)
Wet ingredients:
250 ml (1 cup) homemade or store-bought applesauce
125 ml (1/2 cup) brown sugar
1 egg
85 ml (1/3 cup) canola oil
METHOD
Position the rack in the center of the oven. Preheat the oven to 180 °C (350 °F). Line 12 muffin cups with paper liners.
In a bowl, mix the dry ingredients.
In another bowl, mix the wet ingredients. Add to the dry ingredients and gently mix until the batter is moistened. If the batter is too thick, add 1 to 2 tbsp of water (see note).
Divide the batter among the muffin cups.
Bake for 22 minutes or until a toothpick inserted into the center of a muffin comes out clean. Let cool!
NOTE: Personally, I make my homemade applesauce with a few cinnamon sticks to give it a hint of this wonderful spice. Since my applesauce is very thick, I add 2 tbsp of water to my muffin batter.
