INGREDIENTS
375 ml (1 1/2 cups) unbleached all-purpose flour
125 ml (1/2 cup) of Zenit organic chocolate plant-based protein
15 ml (1 tbsp) baking powder
2.5 ml (1/2 tsp) baking soda

1 egg
125 ml (1/2 cup) organic cane sugar
125 ml (1/2 cup) canola oil or melted coconut oil
125 ml (1/2 cup) water
125 ml (1/2 cup) dark chocolate chips
500 ml (2 cups) grated zucchini
METHOD
Place the rack in the center of the oven. Preheat the oven to 180 °C (350 °F). Line a loaf pan with parchment paper to make it easier to remove the loaf.
In a bowl, combine the flour, chocolate plant-based protein, baking powder, and baking soda. Set aside.
In another bowl, beat the egg with the sugar, oil, and water. Add the grated zucchini. Using a spatula, fold in the dry ingredients and chocolate chips.
Pour the batter into the pan. Bake for 1 hour or until a toothpick inserted into the center of the loaf comes out clean.
Let cool completely before removing from the pan.
