Protein orange muffins with dark chocolate chips

Yield: Makes 12 muffins / 7 g of protein per serving

Dry ingredients:

325 ml (1  1/2 cups) unbleached all-purpose flour

125 ml (1/2 cup) of Zenit organic vanilla plant protein

10 ml (2 tsp) baking powder

125 ml (1/2 cup) dark chocolate chips

45 ml (3 tbsp) flax seeds

125 ml (1/2 cup) brown sugar or organic cane sugar

Wet ingredients:

2 eggs

125 ml (1/2 cup) freshly squeezed orange juice

125 ml (1/2 cup) water, milk, or unsweetened plant-based beverage

10 ml (2 tsp) orange zest

85 ml (1/3 cup) small cubes of peeled orange

60 ml (1/4 cup) canola oil



METHOD

Place the rack in the center of the oven. Preheat the oven to 180°C (350°F). Ideally, use a 12-cup silicone muffin pan.

In a bowl, combine the dry ingredients.

In another bowl, combine the wet ingredients. Add to the dry ingredients and gently mix until the batter is moist. If the batter is too thick, add a little water.

Divide the batter among the muffin cups.

Bake for 25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Let cool!
